I discovered this recipe a while back and modified it to make it work better for my family, and we've made it ever since. It's very forgiving, so if you are the type that doesn't like to follow a recipe very precisely, then this one's for you! Here's how to make this yummy little bowl of happiness.
Pour the following into a colander, then rinse and drain:
3 15-oz cans black beans (or various other beans - pinto, kidney, etc)
1 15-oz can corn
Pour the drained beans and corn into a large bowl, then add:
2 red bell peppers, diced
1/2 red onion, diced
1 bunch cilantro, chopped
1/3 cup olive oil
1/3 cup red wine vinegar
Add :
10-15 drops Young Living's "Lime Vitality" Essential Oil (optional, but it does yummy things to enhance the lime flavor)
2 Tbsp lime juice
1 Tbsp lemon juice
Side note: I like to nestle my tablespoon on top of the other ingredients in the bowl and then squirt the lemon and lime juice into it so I don't have to have someone else hold the measuring spoon for me.
Add:
3 Tbsp coconut sugar (or 2 Tbsp white sugar)
1 Tbsp salt
1 bunch cilantro, chopped
1/2 Tbsp ground cumin (1 1/2 tsp)
1/2 Tbsp pepper
1/2 tsp chili powder
Mix well, refrigerate, and serve. It tastes good at room temperature, but I prefer it cold.
If you wanted to create a "complete protein," you could add some rice to this, but I'd add it to each serving (not in the main bowl) so the rice doesn't get soggy.

Pour the beans and corn into a colander, then rinse and drain. Transfer the beans and corn to a large bowl. Add the remaining ingredients, mix well, refrigerate, then serve.
This could be served as a yummy side dish, but we usually just eat it in a bowl for lunch or for a snack.
